Roasted Pineapple and Strawberry Daiquiri
Ingredients:
1 pineapple, peeled cored and sliced into wedges
2 tablespoons brown sugar
Pineapple juice
Bacardi Classic Cocktails Light strawberry daiquiri
Directions:
Preheat oven to 425 degrees.
Add wedged pineapple to a silpat lined rimmed baking sheet. Sprinkle with brown sugar and toss to coat.
Add to the oven and roast for about 20 minutes. It will be ready when it’s slightly browned, soft and juicy.
Let the pineapple cool to room temperature. (This can be done the day before)
Add pineapple to a high powered blender, puree and add in extra pineapple juice to thin out the mixture.
To make the drink add ice to a cocktail glass, fill half with pineapple mixture and then slowly pour in the Bacardi Classic Light strawberry daiquiri. Serve with a wedge of lime.

Classic Rum
Ingredients:
1 1/2 oz. premium rum
1 oz. fresh lime juice
1 tbsp. simple syrup
Directions:
Fill a small rocks glass with ice, and place in freezer to chill.
In a cocktail shaker, combine rum, lime juice, and simple syrup. Add a few ice cubes, and shake well.
Strain mixed cocktail over ice in chilled glass an enjoy. (Alternatively, you can strain this into a chilled martini glass without the ice if you prefer.)

Coffee Infused Raspberry Coffee Daiquiri
Instructions: 
6 ounces coffee infused rum
2 ounces orange liqueur (optional)
1 cup fresh raspberries
1/2 tsp cocoa
1-3 tsp sugar or simple syrup
ice
Directions:
Combine ingredients and puree, strain to remove raspberry seeds. Shake vigorously. Serve up or on the rocks.
Garnish with a fresh raspberry or wedge of lime
