Summer Spritzers

We found some deliciously refreshing summer spritzer recipes on shape.com and picked out some of our favorites to cool you off on the summer days ahead.
First up is this amazing cucumber melon gin spritzer from spicesinmydna.com:

Ingredients
For the melon simple syrup
1 c. water
1 c. sugar
2 c. cantaloupe cubes or balls
For the cocktail
2 oz. melon simple syrup
1.5 oz. gin
1 oz. seltzer water*
melon balls/cubes
cucumber slices
ice
fresh mint
Instructions
In a small saucepan, bring the water and sugar to a boil. Let boil for 30 seconds, remove from heat, and let cool completely. Once cooled, add to a blender or food processor with the cantaloupe cubes/balls. Blend until completely smooth.
To make the drink, add ice to a cocktail shaker along with a fresh mint leaf. Add the simple syrup and gin, and shake for 30 seconds. Fill glass with ice, a few melon balls and cucumber slices, and then pour in the drink. Top with seltzer, stir to combine, and garnish with mint, and extra cantaloupe/cucumber slices!

Ingredients
1 large apple
1 750mL bottle sparkling wine (chilled)
2 c. club soda (chilled)
4 tsp. Stevia in the Raw
1 cup fresh strawberries (hulled and sliced sideways)
1.2 c. fresh raspberries
1.2 c. fresh blueberries
Instructions
Place apple on a cutting board and cut 2 pieces on either side of the core. Cut the pieces into ¼” thick slices and use a small star cutter to cut out star shapes from the apples.
In a large pitcher stir together wine, club soda, and Stevia In The Raw® until the stevia is dissolved. Add apple stars, strawberries, raspberries, and blueberries and serve.

Ingredients
1 (750ml) bottle red wine
1 (34 oz) bottle club soda
Optional Garnish:
mint leaves
raspberries fresh
Instructions
Fill glass 1/2 full with ice.
Pour wine over ice until glass is 1/2 full.
Fill remaining glass with club soda.
Garnish with raspberries and mint leaves (optional), serve and enjoy!
