The hallmark of the domaine is extended ageing on the lees – a minimum of 7 years for the Extra-Brut. Why? Because Gilbert Cordeuil likes Champagnes with lots of bottle age – and so do we, but usually we can’t afford them! While not vintage dated, the fruit for this bottling is entirely from the 2005-2006 vintage. The unusually long time on the lees gives it a rich, round texture and decadent notes of praline and brioche. A delicious and happy celebration bubbly, perfect with a soft, triple cream cheese.
