Domaine Weinbach from Alsace makes some of my favorite white wines. A few months ago, I brought their Cuvée Théo Riesling to a friend’s dinner. They were hesitant, thinking Riesling was too sweet, but I explained this one is bone-dry. One sip changed everything—the bright minerality and notes of lime zest and green apple were a hit. They’re still talking about it and now exploring Alsace wines. Moments like that remind me why I love what I do.
